Ipswich has some history with sugar cane and rum that dates back to the 1880’s.

The first rum distillery was built at Marburg in 1886 and was said to the most modern of its time in South East Queensland. This all came to an end in about 1905 and no rum has been produced since. Until now.

We started this project in May 2020 and set out to produce a rum that would put Ipswich back on the map.

Heritage City Rum is a lighter style with subtle batch differences. Batch 2 has vanilla and honey notes from the barrel selection.  It is super smooth and belies its 50% ABV.

It was hand bottled, hand labelled, and each bottle is individually hand numbered.

There are only 150 bottles in this batch and the next batch will not be ready until 2026

Pre order from the 5th of June. Orders will be processed on the 6th of June and the distillery door will be open on the 6th for collection.
