They say you never forget your first.
For us, that’s Three Myrtles Gin, the spirit that put Imbibis on the map when it got us our first ever medal at the
London Spirits Awards back in 2021.
But after a long-awaited break, our Three Myrtles Gin is finally back.
And this time… it’s even closer to home.
We harvested lemon myrtle and cinnamon myrtle straight from our own backyard, fresh, organic, and bursting
with fragrant oils, then distilled it into something that’s soft on the palate, crisp on the nose, and lingers just
long enough to make you wish you poured a double.
It’s smooth. It’s subtle. And it’s back.
Distilled With the Soul of Queensland
This is our take on a classic London Dry, but it’s soaked in sunshine and grounded in bushland.
At its core, Three Myrtles Gin is juniper-forward, true to tradition. But from there, we take a detour into the
Australian wilderness.
You’ll find the usual cast of gin botanicals: coriander seed, angelica root, orris root, and a touch of liquorice root
for balance.
But what sets this gin apart, what makes it ours, are the native botanicals:
- Lemon myrtle, hand-picked and sun-kissed, adds a bright, citrusy zing that lifts the entire spirit.
- Cinnamon myrtle, soft and warming, gently wraps the finish with a spiced whisper.
- Anise myrtle, with its sweet liquorice aroma, rounds out the mid-palate and adds unexpected depth.
- Dorrigo pepper leaf gives it a gentle bushfire warmth, while local olive leaf grounds the whole
experience with a dry, savoury finish.Every note is deliberate. Every botanical chosen not just for its flavour , but for the way it brings out the best in
its companions.
A Sensory Experience From Nose to Finish
Take a moment before you sip. Bring the glass to your nose. Let the aroma spill in.
At first, there’s a soft citrus burst, sharp, clean, and unmistakably lemon myrtle. Then the warm notes creep in.
There’s a whisper of cinnamon, a kiss of eucalyptus, and a pinch of dry spice. The first sip is silky. The spirit
glides across your tongue with a texture that’s almost creamy.
Then it opens up. A fresh, herbaceous hit at the front. Zesty citrus and piney juniper dancing on the mid-palate.
And then… the finish. Long. Warming. Whispering bush spice and sweet myrtle oil, like a slow exhale at the end
of a good day.
How to Enjoy It
You can treat Three Myrtles like any good dry gin. But if you really want to bring out its personality?
Start with Long Rays Original Tonic for a crisp, clean G&T. No overpowering quinine. Just a light sparkle that
lets the botanicals shine.
Prefer something citrus-forward? Long Rays Citrus Tonic plays beautifully with the lemon myrtle and brings
out the sweetness in the cinnamon myrtle.
Finish it with a slice of dehydrated lime. Maybe a sprig of thyme or native mint if you’re feeling fancy.
And if you’re into your Negronis or Martinis? Give it a go. Just be warned, once you taste the Three Myrtles twist,
you might struggle to go back.

This was our first gin to come back with a medal. And now, it’s the first to be made with ingredients grown at
home.
