It started as a passion project. No expectations. Just a bold idea, a batch of certified organic agave syrup, and a drive to do something no one else in Ipswich had done before.

That idea became Licor de Agave.

And now? It’s taken home a bronze medal at the 2025 Melbourne Royal Australian International Spirits Awards.

Our first agave spirit. Our first time entering it into competition. And already, it’s being recognised on the national stage.

This isn’t some knock-off imitation. It’s a spirit with its own identity — clean, modern, and crafted for sipping.

Licor de Agave is made from certified organic agave syrup, fermented and double-distilled on-site by the team here at Imbibis. Batch 1 is limited to just 135 bottles, and if the judges are anything to go by, it won’t be around for long.

What sets it apart is the balance.

You get green fruit on the nose. Subtle and fresh, like a pear skin or the inside of a honeydew, just barely ripe.

On the palate, it’s round and restrained. Soft fruit notes come through first — nothing overpowering, just gentle sweetness backed by a mineral backbone that gives it shape. Then it finishes with clarity.

Not burn. Not bitterness. Just this clean, dry, whisper of pine needles and soft herb that lingers for half a second and then disappears completely.

No sharpness. No cloying aftertaste. No rough edges.

It’s the kind of spirit that leaves you blinking for a moment, because you expect heat, and get silk.

Here’s What the Judges Had to Say

“Very light nose, some green fruit notes, good fruit through the palate and a nice clean mineral finish. Very light overall… a clean and enjoyable spirit. Hints of pine needles and spirit brightness.”

For a first release? That’s a review we’re proud of.

But more than that, it validates what we felt in that first tasting: that there’s something different here. Something worth paying attention to.
